Slice peppers in half. For milder taste remove the membrane and seeds. If you love the heat, them in!
Mix together the cream cheese, cheddar cheese, and seasoning.
Fill each half of the pepper with the cheese mixture.
Wrap each filled pepper half with a half strip of bacon tucking the bacon ends under itself so it stays secure, or secure with toothpicks.
Bake for 15-20 minutes until bacon is crisp.
Depending on the size of your peppers, or how full you stuff your peppers, you may end up with leftover cheese. No worries! This works well as a cold dip or a hot one! Toss remaining cheese mixture into a ramekin, top with more shredded cheese and parsley. Bake until the top cheese is golden and bubbly. Enjoy with crackers or a warm crusty bread.
