Loaded Baked Potato Salad

The very best potato salad you could ever make that tastes exactly like a bowl full of baked potatoes with all the fixings.

  • 5 lbs baking potatoes
  • 1 tbsp olive oil for brushing
  • 1 lbs bacon crumbled
  • 1.5 sticks butter softened
  • 1.5 pints sour cream
  • salt and pepper to taste
  • 1 bunch scallions thinly sliced
  • 1/2 lb cheddar cheese shredded


  1. 1. Preheat the oven to 400 degrees . Pierce the potatoes with a fork; brush with oil. Bake until tender, 1 hour. Let cool, then cut into bite-size pieces.

    2. In a skillet, cook the bacon until crisp, about 10 minutes. Drain.

    3/ In a large bowl, combine the butter and sour cream; season with salt and pepper. Stir in the potatoes, bacon, scallions and cheese. Serve at room temperature.

Recipe Notes

*If you want to make this ahead of time - bake the potatoes, shred the cheese, chop the scallions and fry/crumble the bacon.  Then when its time to party, you just cut up the potatoes and assemble!
