You guys, this potato salad is not like your grandmother’s potato salad. This is special and magical and tastes EXACTLY like a baked potato in a bowl and it is every single thing you want it to be. There really are no words for how good this is. It’s creamy and cheesy and full of BACON.
I get so many compliments when I take this bowl of deliciousness to parties that I feel like I’m a kitchen superhero. When really, all I do is bake the potatoes in the morning, let them cool and assemble the rest.
Summer and picnic season are upon us and you can scale this down and have it for dinner next to a steak instead of a true baked potato. You could also scale it up and ROCK the house at the next cookout you’re invited to. Yeah, Janice, I brought the thunder. Get that weak bag of chips out of here!

Loaded Baked Potato Salad
The very best potato salad you could ever make that tastes exactly like a bowl full of baked potatoes with all the fixings.
- 5 lbs baking potatoes
- 1 tbsp olive oil for brushing
- 1 lbs bacon crumbled
- 1.5 sticks butter softened
- 1.5 pints sour cream
- salt and pepper to taste
- 1 bunch scallions thinly sliced
- 1/2 lb cheddar cheese shredded
1. Preheat the oven to 400 degrees . Pierce the potatoes with a fork; brush with oil. Bake until tender, 1 hour. Let cool, then cut into bite-size pieces.
2. In a skillet, cook the bacon until crisp, about 10 minutes. Drain.
3/ In a large bowl, combine the butter and sour cream; season with salt and pepper. Stir in the potatoes, bacon, scallions and cheese. Serve at room temperature.
*If you want to make this ahead of time - bake the potatoes, shred the cheese, chop the scallions and fry/crumble the bacon. Then when its time to party, you just cut up the potatoes and assemble!
